| This makes a small amount of marzipan, scale up the recipe if you need more |

1/4 egg 1/8 tsp almond essence 1/8 tablespoon lemon juice 1oz caster sugar 1oz icing sugar 2oz ground almonds |

Whisk the egg with the almond essence and lemon juice. Stir in the sugars and almonds. Knead the mixture with your hands until it forms a dough.
Leave in the fridge for a while before you use the marzipan. |
