| This cake should be eaten quickly as it does not keep as long as a normal cake |

6oz dairy-free baking margarine 6oz caster sugar 3 eggs 6oz self-raising flour 1 large (preferably old) banana |

| Mix together the margarine and sugar until smooth. Slowly add the eggs and then the flour. Mix well to make sure that there is enough air in the mixture. Mash the banana and add to the mixture. Pour into a greased cake tin and bake at 180°C for 35-40 minutes, or until a knife inserted into the cake comes out clean. |
