| Essential for some of my recipes. It always seems to crumble when I roll it out, but rolling it out and putting the pieces in the tin bit by bit and squishing the edges together works fine |

6oz plain flour pinch of salt 3oz dairy-free baking margarine 3 egg yolks 3oz caster sugar a few drops vanilla essence |

| Sift flour and salt into a mixing bowl. Add the margarine, cut it into small chunks, and rub it in with your fingers until the mixture resembles fine breadcrumbs. Make a well in the center of the mixture and add the yolks, sugar and vanilla essence. Mix in the flour mixture using a knife, then knead until smooth. Place in a plastic bag and chill for at least 30 minutes. |
